Celebrate St. Patrick's Day with the Irish Colada

St. Patrick’s Day is hardly a celebration without a little imbibing. I wanted to come up with something green without being cheesy (no green beers please!) so I put together this Irish Colada, a spin on the classic Pina Colada but with Irish whiskey, matcha, and banana. This Irish Colada is perfect for celebrating the Emerald Isle and a cocktail I will be drinking long after St. Patrick’s Day comes and goes.

Irish Colada, serves 1

1 1/2 oz. Irish whiskey (I used Jameson)

1/2 oz. banana liqueur

1 1/2 oz. pineapple juice

1 1/2 oz. matcha coconut syrup

pineapple wedge, pineapple leaves, and toasted coconut, for garnish

First, make your matcha coconut syrup. I used equal parts (1 can each) of coconut cream and coconut milk. In a saucepan combine them with 2 teaspoons of matcha powder, whisking until combined over low-medium heat. I used a matcha whisk to help incorporate the matcha better. Let cool and store in a jar or bottle in the refrigerator for 1-2 weeks.

I decided to make this drink shaken instead of frozen to mimic more of an iced matcha latte feel. Additionally, shaking it also doesn’t sacrifice the gorgeous green hue of the drink. Add all ingredients to a cocktail shaker with ice, shake, and strain over cracked or crushed ice in a highball or serving vessel of your choice. These adorable flamingo glasses are from my friend Meg over at Love & Victory. Finally, garnish your drink with a pineapple wedge, pineapple leaves, and toasted coconut. I toasted some coconut flakes with my kitchen torch but you can also do it over the stove.

The thing I miss the most about working in a tiki bar is an elaborately garnished drink. Each drink that went out was like a little piece of art. We had dozens of different straws, stirrers, and even little pipe cleaner animals! These sparkly palm tree stirrers remind me of those days and are from the Palm Springs Style Shop. I picked them up at the store while I was in Palm Springs for Modernism Week but they are also available here online if you need some fun garnishes at home!

Overall I really love how this Irish Colada came together. Whiskey and coconut complement each other surprisingly well and it was fun incorporating Irish whiskey into a tropical cocktail. The banana liqueur adds a touch more fruitiness and it’s one of my favorite ingredients to use with coconut in cocktails. In addition to the vibrant color, using matcha also adds health benefits to this drink. It’s packed with antioxidants/vitamins and is known to boost metabolism, relax the mind, increase concentration, and enhance the mood among many other things! Sounds like the perfect ingredient to pair with mood enhancing alcohol, don’t you think 😉 ? Matcha also adds sweet, vegetal, grassy notes that complement the other ingredients in this Irish Colada perfectly.

Boozy Matcha Latte

I love matcha A LOT! Last year I made a matcha piña colada and that kind of sparked my obsession with this green powdered goodness. Matcha smoothie bowls, matcha lattes, matcha soft serve, matcha ice cream, matcha brownies…okay you get it! After indulging in an iced latte last week I had an epiphany – this would be really good with rum in it. I often think that though. We can agree that basically everything would taste better with a little rum in it. Period. Okay, I also have a large obsession with rum as you might have noticed. Moral of the story: Do what you love.

I’ve been trying to eat cleaner but I guess drinking cleaner might be counter productive. You can still of course indulge and make smarter choices that are less impactful on your body, mind, and your whole next day. I struggle with really bad hangovers so I try not to push my limits anymore. You’d expect because of my blog and my profession that I’m a BIG drinker. In fact, I pride myself on moderation, and above all things, drinking and serving responsibly. I love to incorporate healthy elements into cocktails by always using the freshest ingredients and using things like teas, ginger, turmeric, etc. All of these things are good for you and of course make you feel a bit less guilty about having another. Boozy Matcha Latte, serves 1

2 oz. white rum (I used Plantation)

1 cup milk of your choice ( I used Almond)

2 Tsp. matcha

1 Tbsp. orgeat

ice

float of coconut cream

Add the rum, milk, orgeat, and matcha to your cocktail shaker, add ice and shake. Strain into a highball glass over ice and top with whipped coconut cream.

To make the coconut cream: refrigerate your can of coconut cream for a few hours or over night. When you open the can, drain the liquid and then scoop out the solid cream. You can add sugar if you’d like to sweeten it but I left it as is. I actually over whipped mine by accident, so don’t “whip it good”. 😉

Matcha is high in antioxidants, calming, boosts memory and concentration, increases energy levels, burns calories, detoxifies the body and strengthens your immune system. As if you needed more reasons, the other great thing about this matcha latte recipe is you can, by all means, leave the booze out. If you decide to use a plant based milk this recipe is 100% Vegan. I loved the addition of orgeat as a sweetener to enhance the almond flavor of this drink. If you’re not familiar with orgeat, it is an almond syrup made from almond milk. I enjoyed how this boozy interpretation of a latte came out and it would be great as a brunch cocktail, dessert cocktail or if you’re just in the mood for something sweet. The coconut whipped cream is easy and I actually prefer to use it over real heavy whipped cream because the flavor is amazing! Using Matcha in Cocktails and the Magnificent Seven

This week I played around with using Matcha in a cocktail. It is a type of powdered green tea that is produced primarily in Japan from specially grown and ground shaded tea leaves. It can be used to make an antixoidant rich green tea, or in recipes for smoothies, I love to bake with it, and it is an interesting ingredient to use in cocktails.

There are a lot of plus sides to working with Matcha health wise.

  • It creates energy, plus is calming thanks to amino acids.
  • It is a powerhouse of antioxidants.
  • Aids in weight loss.
  • Helps increase focus and concentration.
  • Supports skin health by reducing inflammation and free radicals that accelerate skin aging.

While this is all great and awesome I have to be honest, I thought it would just be delicious in drink form. From here I thought about all other ingredients that would pair well with it. Cocktail creation for me is kind of like baking, you figure out your flavor profile and what ingredients you would like to be working with and then you adhere to a recipe as your format for building.

One of my favorite drinks of all time is the Pina Colada, because Pina Coladas, am I right? I used this as a template and inspiration for my cocktail. You can get as creative as you want when you are inventing a new drink but referencing classics and understanding proportions and ratios is key. I decided to name my drink The Magnnificent Seven. The title is from a country western movie made in 1960 that is based off a Japanese film called The Seven Samurai. There also happens to be 7 ingredients in this drink. Lucky me!

The Magnificent Seven

1 1/2 oz. Aged Rum (I used El Dorado 5 year)
1 oz. Pineapple Juice
1/2 oz. Lime Juice
3/4 oz. Coconut Cream (2:1 Coconut Milk & Coconut Cream)
3/8 Orgeat (almond milk syrup)
3/8 Cacao (Tempus Fugit makes a lovely dark Creme de Cacao)
1/2 tsp Matcha Green Tea Powder

Add all your ingrdients to a blender pitcher, add ice and blend. Pour into a large glass like a highball, hurricane, or tiki mug. Garnish with a slice of pineapple, pineapple leaves, and always a parasol.
